Amelie Rose’s “Otter” Dahl

Don’t panic! No actual otters get harmed in the making of this dish – in fact it’s vegan friendly unless you decide to use beef dripping instead of healthy (!) olive or rapeseed oil. What it does include is lots or earthy goodness and mouth-watering flavours whether it’s served as a main, a side-dish or a thick hearty soup.

Amelie Rose’s Spaghetti Puttanesca (and bonus “Cheats” Garlic Bread)

There’s much to love about Spaghetti Puttanesca. It’s tasty, it’s incredibly fast to make, it’s easy to turn it vegetarian (or even vegan), and apart from the onion and garlic (both of which store pretty well on board) it’s entirely made from store-cupboard ingredients. We often have this on arrival after a passage because the sauce can be knocked up in advance of landfall and then the whole thing comes together in minutes but still looks and tastes amazing.

Amelie Rose’s Quick Veggie Curry

This simple vegetarian curry makes for brilliant warming passage food – and is flexible enough to soak up any “leftover” veggies from the fridge. Although there’s no reason that you couldn’t throw some chicken in too, the veggie version is pretty quick to cook making it a regular on Amelie Rose’s menu plans. We normally pair it up with some mini naan’s and Amelie Rose’s Idiot Proof Rice but it could equally well serve as a veggie side to a meaty curry or a dahl if you want to push the boat out.

Amelie Rose’s Mushroom and Walnut Bolognaise

One of the first recipes that we tried out when we started to introduce more plant-based meals to Amelie Rose’s galley, this fabulous vegetarian bolognaise sauce has become a firm favourite with all our crews. Easily upgradable to fully vegan with the replacement of the cheese and cream with plant-based options it has a real depth of flavour and is surprisingly quick to knock up.

Amelie Rose’s Houmous, Halloumi & Chilli Wraps

Lunches under-way are always a bit of a conundrum; ideally they need to be hot on a cold day, cold on a hot day, tasty on any day but also hand-held and not too tricky to put together in a galley that persists in moving around. Our Houmous, Halloumi and Chilli Wraps are just the ticket – and can be prepared in advance if you want them cold or slapped together with halloumi hot from the pan if the crew look in need of a handwarmer or two…

We love Dorset and really enjoyed our time living there. Part of the reason is that any county that chooses this stunning cake as it’s county dish has got to be a winner. Dorset also has the cheeriest County Flag of any we know – but that’s a different tale so let’s get back to the lovely cake.
